Fresh Milled Flour Banana Bread Blondies

Soft and rich banana bread blondies made with fresh milled flour and chocolate chips. A simple, from-scratch whole grain dessert with a tender center and lightly golden edges.

Ingredients

  • 1/2 cup melted butter
  • 1/2 cup packed light brown sugar
  • 1/3 cup granulated sugar
  • 1/2 cup mashed banana
  • 1 1/2 teaspoons vanilla extract
  • 225 g soft white wheat berries
  • 1/4 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 2/3 cup chocolate chips

Instructions

  • Preheat oven to 350°F. Line an 8×8 pan with parchment paper.
  • Weigh out 225 g soft white wheat berries (or another soft wheat of choice) and mill on the finest setting of your grain mill.
  • In a small bowl, whisk together the freshly milled flour, baking powder, salt, and cinnamon.
  • In a medium bowl, mix together the melted butter, mashed banana, brown sugar, white sugar, and vanilla.
  • Add the dry ingredients to the wet ingredients and mix until just combined.
  • Fold in the chocolate chips.
  • Spread the batter into the prepared pan.
  • Bake for 25–28 minutes, or until the edges are set and lightly golden.
  • Allow to cool slightly before slicing.

Notes

Wheat options: Spelt, einkorn, soft white, or even a blend of all of them will work really well in this recipe. 
Make it dairy-free: You can swap the butter for a plant-based butter for a dairy-free version.
