Instructions

  1. Washing: Wash eggs thoroughly to remove dirt and debris. Rinse in a large bowl of water, discarding any that float.
  2. Blending Eggs: Blend eggs in batches using a blender for about 10 seconds or until smooth Pour onto trays. My trays hold 18 eggs per tray.
  3. Pre-Freezing (Optional): Stack trays in a crisscross pattern in the freezer, using silicone mats between them to prevent sticking. This can save 8-12 hours in the freeze dryer.
  4. Freeze Drying: Transfer frozen trays to the freeze dryer and set to 120 degrees (follow the instructions for your specific freeze dryer). The process takes about 20 hours, varying by freeze dryer brand, size, and egg volume.
  5. Crumbling: Once dried, break the eggs into crumbles with a spatula for easy measuring and reconstitution.
  6. Packaging: Pack crumbled eggs in glass jars or mylar bags with oxygen absorbers for long-term storage
