Why You’ll Love This Fresh Milled Flour Pecan Pie Bars Recipe

  • Made with fresh milled flour. Freshly milled whole grains add delicious flavor and wholesome goodness to both the shortbread crust and the pecan pie filling.
  • No corn syrup needed. Pure maple syrup gives these bars a delicious sweetness and rich maple flavor.
  • Easy shortbread crust. The crust comes together with just four simple ingredients and requires no rolling or chilling.
  • Perfect for holidays. These bars are easy to make ahead, slice, and serve for Thanksgiving, Christmas, or any holiday gathering.

Key Ingredients

  • Soft wheat berries: I use freshly milled soft white wheat berries for a tender shortbread crust and in the pecan pie filling. You could also try another soft wheat variety, like spelt or einkorn.
  • Granulated sugar: I use organic cane sugar, which adds sweetness and gives the crust a slightly crisp texture.
  • Light brown sugar: Adds sweetness and a delicious caramel flavor to the pecan pie filling.
  • Salt: I use Redmond Real Salt to help balance the sweetness.
  • Butter: I prefer grass-fed salted butter, but unsalted works too.
  • Maple syrup: I love using pure maple syrup in my pecan pie filling. It adds a delicious maple flavor and sweetness without needing corn syrup.
  • Eggs: Help bind the pecan pie filling together and give it that classic soft, gooey texture.
  • Vanilla extract: Adds warmth and enhances the flavor of the filling.
  • Pecans: I like using coarsely chopped pecans for plenty of crunch in every bite.

Tips for Making the Best Fresh Milled Flour Pecan Pie Bars

Easily chop the pecans. For a quick, mess-free way to chop pecans, I like to put them in a resealable bag and use a wooden spoon to chop them into smaller pieces. It makes cleanup so much easier!

Press the crust firmly. Press the shortbread mixture evenly and firmly into the pan so it stays together when sliced.

Don’t skip baking the crust first. Parbaking helps the crust set before adding the pecan topping and keeps it from becoming soggy.

Let the bars cool completely. The caramel topping needs time to set as it cools. I like to refrigerate mine for up to an hour after they’ve cooled to room temperature to make slicing easier.

How to Make Fresh Milled Flour Pecan Pie Bars

Here’s how to make these fresh milled flour pecan pie bars. I’ll walk you through each step below, and you’ll find the full recipe and measurements in the recipe card at the bottom of the post.

1. Prepare the Pan

Preheat the oven to 350°F. Line an 8×8-inch baking pan with parchment paper, leaving some overhang on the sides for easy removal.

2. Make the Shortbread Crust

Weigh 150 g of soft white wheat berries and mill them into fresh flour. In a medium mixing bowl, combine the freshly milled flour, granulated sugar, and salt. Add the melted butter and stir until a soft, crumbly dough forms.

3. Bake the Crust

Transfer the dough to the prepared baking pan and press firmly and evenly into the bottom. Bake at 350°F for 15–20 minutes, or until the crust is set and the edges begin to turn lightly golden. While the crust is baking, prepare the pecan pie topping.

4. Make the Pecan Pie Topping

While the shortbread crust bakes, weigh 25 g of soft white wheat berries and mill them into fresh flour. In a medium mixing bowl, combine the eggs, maple syrup, brown sugar, melted butter, vanilla extract, salt, and freshly milled flour. Mix well until fully combined. Add the chopped pecans and stir until evenly distributed throughout the filling.

5. Assemble and Bake

Pour the pecan pie filling over the warm shortbread crust and spread evenly across the pan. Return to the oven and bake at 350°F for 25–30 minutes, or until the topping is puffed and dry on top.

6. Cool and Slice

Place the pan on a wire rack and let the pecan pie bars cool completely at room temperature, then chill in the refrigerator for 30-60 minutes to help the filling firm up before slicing. Once chilled, use the parchment paper overhang to lift the bars out of the pan and cut into squares.

  • Caramel sauce
  • Dulce de leche
  • Coffee or tea

Pecan Pie Bars Variations

  • Add chocolate chips. Sprinkle ¼–½ cup of chocolate chips over the warm crust before adding the pecan topping for a chocolate pecan version.
  • Try different nuts. Swap some or all of the pecans for chopped walnuts for a slightly different flavor and texture.
  • Add a little cinnamon. Stir ¼ teaspoon cinnamon into the caramel topping for a warm, spiced flavor that’s especially delicious during the holidays.
  • Use dark brown sugar. Substitute dark brown sugar for light brown sugar to give the caramel topping a deeper molasses flavor.
  • Add flaky sea salt. Sprinkle a little flaky sea salt over the bars after baking for a sweet and salty twist.

How to Make Ahead and Store Fresh Milled Flour Pecan Pie Bars

These pecan pie bars are a great make-ahead dessert, especially for holidays and gatherings! You can prepare them a few days in advance and keep them in the fridge until you’re ready to serve.

Refrigerator: Once the bars have cooled and the topping has set, place them in an airtight container and refrigerate for up to 5 days. Enjoy them chilled, or let them come to room temperature for a chewier, softer caramel topping.

Freezer: For longer storage, arrange the cooled, sliced bars in a freezer-safe container, with parchment paper between layers to keep them from sticking together. Freeze for up to 3 months.

Thawing: When you’re ready to enjoy them, let the bars thaw overnight in the refrigerator. Serve them chilled or bring them to room temperature before serving.

FAQ

I prefer soft white wheat berries for this recipe because they make a tender, buttery shortbread crust. However, since this recipe doesn’t use baking powder or baking soda, you can experiment with other wheat varieties, including hard white, hard red, spelt, or einkorn. Just keep in mind that different grains may give the crust a slightly different texture.

If your pecan pie bars are too soft, they may need a little more baking or cooling time. Make sure to bake until the pecan topping is puffed and dry on top. Let the bars cool completely at room temperature, then refrigerate for 30–60 minutes to help the filling firm up before slicing.

Yes! You can use light or dark corn syrup in place of the maple syrup, using the same amount (¾ cup). The bars will have a more traditional pecan pie flavor without the hint of maple.

Yes, honey should work as a substitute for maple syrup in this recipe. You can try using the same amount (¾ cup), but keep in mind that honey has a different flavor and consistency, so the filling may turn out slightly different. I haven’t tested this version with honey yet.

Absolutely! These bars are a great make-ahead dessert because the caramel topping needs time to cool and set. You can prepare them the day before serving and keep them refrigerated until you’re ready to enjoy them.
