  • Sugar: I used organic cane sugar. It adds just the right amount of sweetness while helping create those lightly golden edges and a soft, tender center.
  • Soft White Berries: I used freshly milled soft white wheat for a light, tender crumb. It would also be great with spelt, einkorn, or even a blend of all three; experiment and see what you like best!
  • Salt: Just enough to bring everything together and give these bars that perfectly balanced flavor. I use Redmond’s Real Salt.
  • Vanilla + Almond Extract: This combination adds depth and a subtle bakery-style flavor. The almond extract is light but really elevates the overall taste.
  • Jam: I used Crofter’s Organic Berry Harvest jam, a blend of strawberries, blueberries, blackberries, and raspberries, but this will work with any flavor of jam or preserves.

How to Make Fresh Milled Flour Jam Bars

  1. Preheat oven to 350°F. Line an 8×8 pan with parchment paper.
  2. Weigh out 300 g soft white wheat berries (or another soft wheat of choice) and mill on the finest setting of your grain mill.
  3. In a stand mixer, combine the butter, sugar, salt, vanilla, almond extract.With the mixer running on low, slowly add the freshly milled flour until the dough starts to come together.
  4. Press 2/3 of the dough firmly into the bottom of the pan.
  5. Spread the jam over the base layer.
  6. Crumble the remaining dough over the top.
  7. Bake for 30–35 minutes, or until lightly golden.
  8. Cool completely before slicing into bars.

Tips for the Best Fresh Milled Flour Jam Bars

Weigh your wheat berries, not your flour
With fresh milled flour, the weight stays the same before and after milling. Just weigh your wheat berries first, then mill, no need to measure again. For example, 300g of wheat berries will give you 300g of fresh milled flour.

Measure the dough for perfect layers
For a more even base and topping, weigh your finished dough and calculate 2/3 for the bottom layer. This takes the guesswork out and helps you get a consistent crust every time.

Press the base firmly
It can take a minute for the dough to smooth out as you press it into the pan, but keep working it, it’ll come together and create a sturdy base for the jam.

Watch your bake time
Bake until the top is lightly golden. If it’s not starting to brown around 30 minutes, give them a few more minutes; it can take closer to 35-40 minutes depending on your oven.

How to Store Fresh Milled Flour Jam Bars

After the bars have fully cooled, transfer them to an airtight container. They can be kept on the counter for up to 1-2 weeks or refrigerated for up to 3 weeks.

For longer storage, place the bars in a single layer to freeze until firm, then transfer to a freezer-safe container or bag. This keeps them from sticking together. Thaw at room temperature before serving.

    These are amazing! And so easy to make. I wanted to give it 5 stars, but it doesn’t allow me to give it more than 4, maybe it’s just a glitch with my phone. We couldn’t wait to try them, so we ate them warm. So delicious!
