One pound of wheat berries weighs about 454 grams. Using 130 grams as my fresh milled flour cup standard, that’s approximately 3½ cups of freshly milled flour by weight.

The amount you end up with may vary from one grain to another and depending on how the flour is milled and measured, which is why I still recommend weighing it.

I don’t use a cup-for-cup substitution. Instead, weigh the fresh milled flour. My starting conversion is 130 grams of fresh milled flour for every cup of conventional flour called for in the recipe, then adjust if necessary.

You may. Whole-grain fresh milled flour can absorb quite a bit of moisture, but don’t automatically add more liquid. Mix the recipe, allow the flour to hydrate when appropriate, and then make small adjustments.
